Cindi, isn&#039;t Tasha Tudor wonderful?  Or wasn&#039;t she, I guess I should say.  But I think she will be timeless and here always because of her work.  I do use lemon balm in my teas/infusions.  I take the fresh leaves, wash them off and pour boiling water over them in combination with other herbs to make tea.  Sometimes I add a few in with just a steeping tea bag, to get something &quot;green&quot; in my tea.
