Amber, I know exactly what you mean. I try to do a little of both. Having to work makes it hard to plan out exactly seven days of meals, but then I don't like to do last-minute ALL the time. A well-stocked pantry makes for a nice balance.

Liane, the same thing happens here sometimes. LOL. My husband usually asks, but sometimes he has a better idea for what I've bought and I just let him go with it if he does. Thanks for the recipe. I'll try it.

Whenever I buy ingredients for a specific dish for later in the week, hubby usually gets a hold of a key ingredient and uses it for his lunch. So, I usually end up doing last minute dinners. One of the quickest and most liked recently is a chicken casserole using a can of cooked chicken, a can of cream of celery soup, a can of mixed vegetables, and this mixture topped with a box of stuffing. dot with butter and cook for 30 min. @ 350. They all love it and it is CHEAP!

Before I started menu planning, the only way I cooked was last minute! :) The bad thing about me menu planning is that I have no back-ups. If for some reason we can't get to the store, I will have no food in the house after my week is up. I only buy for seven days at a time. Your post just made me realize that! I need to make sure that I have a few things hidden away, just in case!
